Vegan Brie

This vegan brie is smooth, flavorful, and surprisingly simple to make. Made with cashews, miso, and nutritional yeast, it delivers a delicate, cheesy flavor and can be enjoyed two ways: warm and melty straight from the oven, or chilled and sliceable like traditional brie. Perfect with crackers, fresh fruit, or baguette.

Ingredients

  • 1 cup (150 g) cashews

  • 1 tsp lemon juice

  • 2 tsp nutritional yeast

  • 1 tsp white miso paste

  • a pinch of salt

  • 1/2 cup (120 ml) vegetable broth

Instructions

  1. Cover cashews with plenty of water and soak overnight. Drain and rinse well the next day.


  2. Add the soaked cashews, lemon juice, nutritional yeast, miso paste, and vegetable broth to a blender. Blend until completely smooth. Add a little water if the consistency is too thick.


  3. Set the oven to 350°F (180 °C) convection.


  4. Line two small oven-safe dishes with parchment paper. Pour in the brie mixture and bake for about 30 minutes.


  5. Serve warm or chilled:


    • Warm: Enjoy straight from the oven with baguette, crostini, or crackers. Top with nuts, dried fruit, or a drizzle of maple syrup for a sweet-savory touch.


    • Chilled: Let cool to room temperature, then refrigerate for about 2 hours to firm up. Serve with grapes, berries, or your favorite bread.
