Pickled Pink Onions

These pickled pink onions are quick to make, full of flavor, and add a beautiful pop of color to any dish. Flavored with mustard seeds, bay leaves, and juniper berries, they’re slightly sweet, tangy, and wonderfully zesty. Ideal for topping tacos, sandwiches, salads, or grain bowls.

Ingredients

  • 3 red onions

  • 2/3 cup (160 ml) apple cider vinegar

  • 2/3 cup (160 ml) water

  • 2 tsp agave syrup

  • 1 tsp salt

  • 1 tsp mustard seeds

  • 2 bay leaves

  • 1 tsp juniper berries

Instructions

  1. Make sure your jar and lid are clean and sterilized.


  2. Peel and slice the onions into thin rings. Place them in the sterilized jar.


  3. In a small saucepan, combine water, vinegar, agave syrup, and salt. Bring to a boil, then let it cool slightly.


  4. Pour the pickling liquid over the onions. Add mustard seeds, bay leaves, and juniper berries. Seal the jar tightly.


  5. Let the jar cool to room temperature, then refrigerate overnight to allow flavors to develop.


  6. Ready to enjoy the next day. Keeps in the fridge for up to 1 week.
