These date truffles combine the natural sweetness of dates with crunchy nuts and oats for a delicious, nutrient-rich treat. A thin layer of dark chocolate adds the perfect finishing touch. They’re ideal for meal prep, lunchboxes, or as a wholesome pick-me-up during the day.

Ingredients
1 cup (200 g) dates
1/2 cup (70 g) mixed nuts
1/2 cup (45 g) oats
1 tsp agave syrup
a pinch of salt
1/4 cup (40 g) dark chocolate
Instructions
Pit the dates and cut them into small pieces. Place them in a food processor and blend into a sticky mixture.
Roughly chop the nuts. In a bowl, combine the date mixture and nuts with the oats, agave syrup, and salt.
Lightly wet your hands and knead the mixture until evenly combined.
Line a dish with parchment paper and spread the mixture evenly on it.
Break the chocolate into small pieces and melt it using a double boiler. Pour the melted chocolate over the date mixture, sprinkle with a pinch of salt and cover the dish.
Refrigerate for 2 hours.
After chilling, cut the mixture into small pieces and serve. Store in the refrigerator and enjoy within a few days.
